We've got another mouth-watering recipe to tempt you with! Whip this up for your sweetheart, and let the magic happen! This is a perfect, easy romantic dinner for two, if you halve all ingredients, or an ideal fast and fancy dinner for family or guests. Ingredients: 4x 8oz Red Snapper fillets, scaled and cleaned 2x Tbsp extra virgin olive oil, plus extra for brushing 2x Oranges, preferably tarocchi or blood oranges 8x Fresh Bay Leaves 20x Small Black Olives (Nicoise or similar) Sea salt, freshly ground pepper to taste Cut four rectangles of parchment paper or aluminum foil, enough to wrap each fish loosely. Brush fillets with oil. Grate the zest from the oranges into a bowl, mix with olive oil, salt, and pepper. Set aside. Peel the oranges as you would an apple, remove all the pith, and slice the flesh thinly. Put 1 bay leaf in the cavity of each fish and 1 on top. Pile orange slices on one side of each parchment square, using half the slices in total. Put the fish on the oranges and cover them with the remaining orange slices. Sprinkle with the oil and orange zest mixture, then add the olives. Season well. Fold the paper loosely over the fish and twist the edges together. Lift onto baking sheet. Bake in a pre-heated oven at 375 degrees Fahrenheit for 20 minutes. Serve on warm plates. Allow guests to open their own packages.

Enjoy! Best wishes, Readers!
