This week's recipe comes from Bach to the Kitchen, a
collection of recipes put together by members of the Washington Idaho
Symphony, and sold as part of their ongoing fundraising efforts. BookPeople
has copies in stock for a mere $12, which gets you 357 pages of recipes as
well as an index (by recipe and by contributor), pantry tips, measurement
charts, cooking terms, calorie counts for common foods, quick fixes for
common cooking disasters, and much much more! Poulet Beau Monde 3-4 lb
Roasting Chicken 2 tbsp Beau Monde Seasoning 1 tsp dried thyme 2 tsp melted
butter 2x large carrots, sliced 2x leeks, sliced 1/2 cup dry white dinner
wine Wipe chicken well. Sprinkle cavity with 1 tablespoon Beau Monde and
dried thyme. Place chicken in 3 1/2 quart casserole dish, breast side up.
Brush with melted butter. Sprinkle with 1 tsp Beau Monde. Roast, uncovered,
in a 375 degree oven for 1 hour, or until golden brown. Add carrots and
leeks to pan. Sprinkle with remaining Beau Monde. Add white wine. Cover and
roas 30 minutes longer, makes 4 servings. Sounds good to me! It's a nice,
simple variant on a roast chicken recipe that I regularly use, to great
success. I'm not sure exactly what this Beau Monde seasoning is, but if the
Washington-Idaho Symphony says it's good, then I think I'm going to have to
go out and find some!
That's all for this time, Readers!
